Abstract:
鸡骨泥是一种含有多种营养成分的动物性蛋白资源,本文以面粉为原料添加鸡骨泥制成高钙麻花。通过单因素试验和正交实验,并结合感观评定,确定4:1的面粉与鸡骨泥混合,醒面30min,180℃油炸6min为最佳工艺条件。同时,采用质构仪分析面团的加工性和成品的质构。
