Abstract:

对两种中式冷冻调理食品即榨菜肉丝和鸡卷进行了研究。冷冻调理榨菜肉丝,改传统的锅炒为油炸,并对油炸条件进行了优化;对可能影响冷冻调理鸡卷品质的因素进行了研究,并对鸡卷的预炸条件进行了优化。最后对这些冷冻调理食品的冻藏稳定性进行了评价。
