Abstract:
对栀子红色素稳定性进行了较为全面的研究.结果表明:栀子红色素总体具有良好的稳定性.它具有良好的耐光性、耐酸碱性;H2O2、山梨酸钾、蔗糖、柠檬酸对其没有不良影响;温度对其有一定的影响;金属离子(Cu2+、Fe3+)、Na2SO3对其有较大影响.
