Abstract:

以青梅为主要原料,采用单因素和正交试验设计对整果青梅果冻的加工工艺进行了研究.结果表明,复合胶0.7%(卡拉胶0.56%,魔芋胶为0.14%)、青梅汁12.0%,白砂糖17.0%和柠檬酸0.10%、整果青梅加入温度65℃时,研制出的果冻质地均匀、气味清新、梅果清脆.
