Abstract:

玉米凝胶淀粉是一种新开发凝胶剂,它与天然的玉米淀粉颗粒形态与晶体结构几乎没有差别.本文从不同浓度、pH值,电解质、非电解质以及老化温度等各方面探讨对玉米凝胶淀粉的凝胶强度的影响,从而单述玉米凝胶淀粉的胶凝机理。为今后探讨玉米凝胶淀粉是否能代替食品行业中常用的胶凝剂琼脂、明胶等提供理论依据。
