Abstract:
采用高温高压法提取石花菜琼胶,以提取率和凝胶强度为指标研究其提取工艺.在单因素实验的基础上,采用BBD中心组合实验设计,利用Design-Expert软件,建立数学模型,确定琼胶最佳提取工艺参数:柠檬酸为0.03%、提取时间为33 min,料液比为1∶36、提取温度为110℃,此条件下琼胶提取率高达37.85%,其感官性质、理化性质符合国家标准,凝胶强度为873 g/em2,属于高强度产品,为石花菜深加工提供一定的理论依据.
