Abstract：
本文介绍了溶菌酶的来源、结构、性质、作用机制、提取方法、酶活力的测定及其在食品工业、医学和酶工程中的应用;并对利用溶菌酶时存在的问题进行了分析总结,对溶菌酶的应用前景进行了展望。
