Abstract：
采用气相色谱-质谱(GC-MS)联用技术分析福建建瓯所产竹醋液(竹沥)的成分,从中鉴定出46种有机物质.其中18种主要成分分别为甲醇(3.83%)、丙酮(0.21%)、乙酸甲酯(2.93%)、乙酸(76.97%)、丙酸甲酯(1.50%)、丙酸(4.47%)、羟基丙酮(0.45%)、戊酸(0.29%)、1-羟基-丁酮(0.32%)、糠醛(2.95%)、1-(2-呋喃)-乙酮(0.25%)、苯酚(1.15%)、丁内酯(0.97%)、5-甲基-2-呋喃-甲醛(0.29%)、对甲基苯酚(0.14%)、2-甲氧基苯酚(1.13%)、对乙基苯酚(0.28%)、2,6-二甲氧基苯酚(0.25%),总计面积百分比为98.38%.
