茭白又称茭瓜、茭笋等,是禾木科菰属多年生宿根水草类植物,原产我国及东南亚地区.茭白含有丰富的蛋白质、糖、钙、磷、铁、粗纤维和无机盐,此外还含有维生素B1、B2、C等,具有降血压、清湿热、解酒毒等保健作用.茭白不仅营养丰富、外型规则,而且价格较低廉,适合于加工罐头食品.
