Abstract:
目的:研究丝胶肽对乳酸菌的冷冻保护作用及其在乳酸菌发酵液冻干过程对乳酸菌菌的保护作用.方法:用OD法检测丝胶肽对乳酸菌低温冷藏后的菌活力;将丝胶肽添加到乳酸菌发酵液中,真空冷冻干燥后用改进的菌落计数法检测酸奶粉中菌含量.结果:丝胶肽能明显减轻低温冷藏对乳酸菌的损伤;将丝胶肽应用于制备发酵酸奶的真空冷冻干燥工艺中,其添加量达1.2%时,具有明显的菌活性保护效果,活菌数约为空白组的3倍.结果表明丝胶肽不仅对乳酸菌具有冷冻保护作用,还有助于提高乳酸菌抗脱水干燥胁迫作用.
