Abstract：
以蜜柚皮为原料,利用酶解提取多糖活性成分,提高蜜柚利用率.该研究选取酶用量、液料比、浸提时间3个因素,以多糖得率为指标,根据响应面Box-Behnken试验设计原理,确定酶解提取蜜柚皮多糖的工艺条件.研究表明,酶解提取蜜柚皮多糖的最佳工艺条件:液料比20∶1(mL/g)、浸提时间2h、酶用量1.0g,该条件下,蜜柚皮多糖得率达到(2.73±0.21)％.酶解法能够有效提高福建蜜柚皮多糖得率.
