Abstract:
酸解法提取海带多糖及微量元素碘、钙等营养成分,进行海带营养液风味优化和海带软糖试制的研究.结果表明,1%盐酸和1%柠檬酸,100℃酸解4 h为酸解较佳条件;海带提取液中添加5%砂糖、7%葡萄糖和控制pH 5.0,可制得口感良好的海带营养液;海带软糖配方为:淀粉糖浆100 g,海带提取渣20 g,白砂糖50g,琼脂5g,CaCl20.01g,和控制pH7.2.
