Abstract:
酸解法提取海带多糖及微量元素碘、钙等营养成分,进行海带营养液风味优化和海带软糖试制的研究.结果表明,1﹪盐酸和1﹪柠檬酸,100℃酸解4h为酸解较佳条件;海带提取液中添加5﹪砂糖、7﹪葡萄糖和控制pH5.0,可制得口感良好的海带营养液;海带软糖配方为:淀粉糖浆100g,海带提取渣20g,白砂糖50g,C<,a>Cl<,2>0.01g,和控制pH7.2.
