Abstract:

采用定量描述分析方法分析6种武夷岩茶标准品(包括大红袍特级、一级,水仙特级、一级,肉桂特级、一级)的香气和滋味特征,分析结果显示,前9个主成分的贡献率达87.04%,第一主成分综合了涩、苦、酸、刺激感、花香、药草香、顺滑7个指标的变异信息,第二主成分综合了回甘、生津、甘甜、草香、奶香、火候香6个指标的变异信息。特级大红袍主要特征为顺滑、火候香,而一级大红袍的甜香较明显;特级水仙有明显的顺滑、甘甜特征,而一级水仙的主要特征为火候香、奶香、草香;特级肉桂主要特征为甘甜、回甘、生津,而一级肉桂与花香、涩、苦、酸、刺激感等的指标相关度较高。
