Abstract:
燕皮是福州特产中的精品,然而,纯手工制作燕皮的传统工艺已无法满足不断增长的市场需求.本文以食品科学理论为指导,对燕皮的传统工艺的加工原理进行研究,开发以机械化代替传统手工制作燕皮的生产工艺,实现燕皮生产的现代化,是发展燕皮这一传统食品的必由之路.
