Abstract:

本发明提供了一种利用海蜇加工下脚料制备抗氧化肽的方法,其以海蜇加工下脚料为原料,采用风味蛋白酶和胰蛋白酶建立海蜇抗氧化肽的复合酶法制备工艺,得到活性较高的海蜇抗氧化肽产品,其可有效提高海蜇产品的附加值,实现低值海蜇的高值化利用,为抗氧化肽的制备提供新来源。
