Abstract:

本发明涉及食用菌食品的安全性及其加工技术领域,具体涉及一种降低食用菌真空冻干食品中咪哇类农药残留的生产工艺。本发明通过对传统食用菌真空冻干食品的生产工艺流程和工艺参数进行合理改进,包括对食用菌原料进行碱水清洗、臭氧水雾化、超声波消解、真空碱水-漂白剂水合、紫外照射步骤,生产出多菌灵等咪哇类农药残留符合国家及国际标准的食用菌速冻产品。本发明提供的生产工艺有效地降低了罐头中咪哇类农药的残留,使咪哇类农药符合国际标准,促进了食用菌产业的可持续健康发展。
