本发明公开了一种绿茶营养冻糕及其制备方法,属于食品加工领域。配方为水100份、绿茶提取物4-8份、鸡皮明胶5-10份、亲水胶0.5-1.0份、椰粉2-4份、奶粉2-4份、蔗糖3-6份、氯化钾0.05-0.10份。将粗绿茶磨碎、过滤,制得绿茶提取物;鸡皮去除多余油脂后加入盐酸浸泡,中和、冲洗,水浴提胶,再加入亲水胶和氯化钾溶解,加入调味剂,冷却成型,冷冻保存。本发明研制得到的绿茶营养冻糕营养丰富、蛋白质含量高、脂肪含量低、茶香明显,易被人体吸收,且能有助消化,食用口感冰爽、润滑,入口即化,是餐后甜点的理想选择,具有广阔的市场前景;原料来源广,生产工艺简单,生产成本低,适于工业化生产。
