综述了甘油脱水酶的结构、性质、酶活测定及其在甘油发酵中的作用机理等研究情况,介绍了甘油脱水酶基因工程的研究进展,并对其参与甘油脱水酶自杀性失活的再生反应进行了介绍,探讨了甘油脱水酶的研究前景并提出一些建议.
