Abstract:

馒头老化是制约馒头工业化进程的一个关键问题。采用单因素试验和正交试验,研究了在4℃下,3种乳化剂(硬脂酰乳酸钙、蔗糖酯、单甘酯)对储存馒头的抗老化效果。试验结果表明,3种乳化剂对馒头均有一定的抗老化效果。通过正交试验,得到3种乳化剂抗馒头老化效果较好的复配比例:硬脂酰乳酸钙0.15%,单甘酯0.10%,蔗糖酯0.08%。
