主要研究以海参体壁为原料制备胶原蛋白肽的工艺条件,通过单因素和正交试验对酶解条件进行优化.结果表明,使用木瓜蛋白酶的酶解效果最好,最佳酶解条件为:酶解温度55℃、pH值7.0、加酶量2%、料液比1:30和提取时间3 h,此条件下海参胶原蛋白肽水解度达到14.23%.
