研究表明,胡萝卜经过冻融处理后,胡萝卜汁的榨出率最高;经过蒸汽热烫21 min处理后,榨汁中的可溶性固形物和胡萝卜素的含量均最高;经过蒸汽热烫30min处理后,单位重量的胡萝卜的可溶性固形物和胡萝卜素的榨出率最高.
