Abstract:

选用木瓜蛋白酶和中性蛋白酶复合酶法提取鱿鱼内脏油,对其工艺进行优化.在单因素试验基础上,采用正交试验设计,以鱿鱼内脏油提取率为评价指标,分别考察复合酶的物质量比、酶解时间、酶解温度、酶用量等对提取率的影响.结果表明,复合酶的最佳酶解条件为木瓜蛋白酶和中性蛋白酶的物质量比1∶2、pH 7.0、酶解温度55℃、酶解时间5h、酶用量2.0%.在最佳酶解条件下,鱿鱼内脏油的提取率达78.21%.与单一蛋白酶法相比,复合酶法提取率明显提高.所得的鱼油理化指标达到SC/T 3502-2000粗鱼油二级标准,鱿鱼内脏油中EPA和DHA总含量达30.82%.
